The farming here is organic and the wine making tends to be straight-forward, relying on native yeasts and a patient elevage in barrel. The AOC Chablis is aged partially in steel and partially in oak with some new barrels in the mix. This mineral-driven Chablis is everything you want out of Chardonnay from northern Burgundy – it’s crisp, thirst-quenching, and absolutely delicious when paired with a variety of foods. Notes of underripe stone fruit, lemon zest, and salty chalk dominate the wine’s acid-driven palate, and is exactly what we look for in great Chablis – zesty, mineral, and refreshing with layers of flavor and complexity to spare.
